Makes enough for two
50ml Elderflower & Cucumber Flavoured Gin
3 Granny Smith apples
Bunch fresh mint
Tonic or soda water to finish
Blend or juice the apples with a generous handful of mint leaves and the juice of half a lemon. Strain (if you’re using a blender) and taste, adding more lemon juice if you prefer a sharper flavour. Pour the Elderflower & Cucumber Flavoured Gin into a cocktail shaker with the fresh juice and shake with ice to combine. Taste – adding more lemon or gin if required. Fill two highball glasses with ice and pour over the cocktail, topping up with a little soda water or tonic. Garnish with sprigs of mint, and slices of cucumber, lemon and apple.
