It’s never the wrong moment – and most certainly never too late – to completely change your life. Bethany Eaton spent six years working as a police constable before deciding to study part time for a degree in nutrition. It took her five years to complete her studies – all while continuing to work for the police force, not to mention becoming a mother to two children! The hard work definitely paid off though – these days, Eaton is a successful entrepreneur and the founder of a multi-award-winning food brand, sold in supermarkets and retailers across the UK.

Motivation for me is all about…

Seeing everything I’ve worked so hard for come to life. My daughter is so amazed when she sees CO YO on the shelves of Waitrose when we do our weekly shop – it means the world. Feedback is also motivating – from people who get in touch to say thanks to CO YO they can finally eat yoghurt to Nigella Lawson saying she loves my product – it’s a huge boost.

Success means…

Doing well at something you love that’s also helping others – one of the reasons I started CO YO is because of a serious lack of good quality dairy free options on the high street in the UK. As a qualified nutritionist it became very frustrating to me that the gap hadn’t been filled – so I decided to fill it myself. I get so many people getting in touch to say it’s opened up a whole world that they thought was closed to them – which is just as important as sales figures to me.

I couldn’t have got there without…

My family being there every step of the way and working extremely hard. Drawing a clear line between work and play keeps me sane – when I’m at work I give everything and when I’m at home I do the same.

I always start my day with…

CO YO! Either in a green smoothie or completely natural topped with tasty Paleo Granola. My favourite kitchen gadget is my Vitamix and it’s always hard at work preparing something nutritious to get the day started right.

When I don’t feel inspired I…

Go out for a walk in the morning sun, get some fresh air and then get down to my day!

It is amazing how in the past three years since we released CO YO how things have changed and how some incredible women have come on the scene. It’s like we have started a revolution and long may it last!

I’d like to be remembered for…

Changing the face of dairy-free in the UK. I started CO YO to solve a very real problem and I’d like to think the brand is starting to transform the way people think about ‘dairy-free’. The revolution is happening – with more and more shops stocking the product and companies like Waitrose massively increasing CO YO’s shelf space as well as the super bloggers like Deliciously Ella spearhead the healthy eating scene – long may that continue.
