Let’s be honest here – who isn’t just a little bored of Pimm’s? The summer cocktail staple is wonderfully fresh, but really we’re ready to try something new. Belsazar‘s Fruit Cup is just what you’ve been looking for – a moreish mix of fortified wine, aromatic with botanicals, oodles of ice and summery flavours of apple, cucumber, berries and mint. This is perfect as an aperitif served with a few nibbles or as an afternoon tipple to while away a few lazy hours in the garden with friends. Actually, as long as the sun is shining, this is pretty perfect at any time of day!

10ml Apricot Brandy
10ml Lemon juice
15ml Apple juice
Layer the ingredients into a tumbler or high ball glass with plenty of ice. Garnish with slices of apple and cucumber, along with mint, berries and lemon zest.
